The traditional nougat, inherited from the Arabs, is a pastry obtained from the cooking of honey, sugar and whites. It is necessary to add to this mixture peeled and toasted almonds to shape it finally as a tablet.
There are two main varieties of nougat: The soft nougat and the hard nougat.
The Imperial Cake is another type of nougat. This is very similar to the "hard" one but it is presented in disk shape inside two wafers. |
